Sautéed zucchini with lemon, garlic, butter, and fresh thyme is a great side dish to serve alongside Italian foods and many other types of roasted and grilled meats. It is very important not to overcook your zucchini! Only about ten to twelve minutes in the skillet is plenty. The dish is rounded out with lemon, garlic, butter, and thyme and is sure to impress your friends and family!

Ingredients

  • 1 1/4 pounds zucchini (2 medium pieces)
  • 1 tablespoon olive oil
  • 1 1/2 tablespoon butter
  • 4 shallots
  • 2 cloves garlic
  • 12 sprigs of fresh thyme
  • 1/8 teaspoon crushed red pepper flakes
  • zest of 1 lemon
  • juice of 1/2 lemon
  • salt and pepper to taste

Instructions

  1. Prep all ingredients ahead as the dish come together quite quickly. Cut zucchini into thirds lengthwise, then cut each cylinder into 8 sticks. Finely dice the shallots. Crush the garlic in a garlic press. Remove the thyme leaves from the stem and finely mince them.
  2. Preheat the olive oil and butter on medium heat. Once butter is almost completely melted, add in the shallots and season with salt and pepper. Saute for about 2 or 3 minutes or until shallots are tender.
  3. Add in the zucchini. Be sure to stir everything around to evenly incorporate. Add more salt and pepper if desired.
  4. After about 2 minutes, add in the crushed garlic and stir to incorporate. We add the garlic at this point to prevent burning it in the skillet.
  5. After the zucchini has been cooking for 6 to 8 minutes, add in the fresh thyme and stir to incorporate. Turn meat down to medium-low.
  6. Add in the crushed red pepper flakes, if using them.
  7. Add in the zest of lemon and stir.
  8. Add in the lemon juice and stir.
  9. Saute for another 3 or 4 minutes or until zucchini is cooked through.
  10. Serve and enjoy!
