Salmon steamed in the parchment paper pouch with a little bit of liquid will taste moist and flaky. I paired it with quinoa and spring vegetables. A drizzle of Lemon Butter Sauce will make this dish extremely tasty!

Ingredients

SALMON IN THE POUCH

  • Filet of Salmon( 1 or 2)
  • 2 cups Quinoa(cooked and cooled)
  • 1 carrot(julienne cut)
  • 1 leek(julienne cut)
  • 1 yellow squash(julienne cut)
  • Salt and pepper to taste
  • ¼ cup white wine
  • fresh Rosemary
  • Olive oil( for drizzling over quinoa)

LEMON BUTTER SAUCE:

  • ½ cup fresh lemon juice
  • 4 tbsp cold butter
  • 1 small shallot(finely chopped)
  • Salt and pepper to taste

Instructions

Prepare your fish as directed in the video.
Bake at 450°F(230°C) for 10-12 minutes. Depending on a thickness of fish.
