Red Velvet Molten Lava Cake is so quick and easy to make and so incredible irresistible! Made with white chocolate to get the best red color result and matched with Cream Cheese frosting, is the perfect Valentine’s Day dessert.

To get the perfect gooey center you don’t have to overbake the cakes so you have to be precise with baking time.

Ingredients

  • 100 g (1/2 cup) Unsalted Butter, cubed
  • 100 g (3,5 oz) White Chocolate, chopped
  • 40 g (3 tablespoons) Caster Sugar
  • Pinch of Salt
  • 2 medium size-large Eggs, room temperature
  • 5 g (½ tablespoon) Unsweetened Cocoa Powder
  • 23 g (2 tablespoons) All Purpose Flour

Cream Cheese Frosting:

  • 125 g (4,5 oz) Cream Cheese, chilled
  • 125 ml (1/2 cup) Whipping Cream (or Heavy Cream), chilled
  • 30 g (1/4 cup) Powdered Sugar
  • 1 tsp Vanilla Paste (or extract)

Instructions

Cream Cheese Frosting:

  1. Whip whipping cream until medium peaks formed.
  2. Mix cream cheese with vanilla and powdered sugar until creamy.
  3. Add whipped cream to cream cheese mix and mix until well combined.
    Red Velvet Lava Cake:
  4. Carefuly butter 4 aluminium muffins molds.
  5. Melt butter, white chocolate, sugar and a pinch of salt over a bain-marie until almost completely melt.
  6. Remove from the bain-marie and mix until slightly cool down.
  7. Add Vanilla and the Eggs one at a time to the chocolate mix: mix it hard using a whisk until smooth and well combined.
  8. Add sifted flour, cocoa powder and combine.
  9. Pour the batter into the prepared molds and fill them for about 2/3.
  10. Bake in preheated oven at 400° F (200°C) for exactly 9 1/2 minutes* (be careful: don’t overbake or the center won’t be creamy).
  11. Remove from the oven and invert immediately the molds onto the serving plates (use a tong so you're not going to burn your fingers).
  12. Sprinkle powdered sugar on top and serve immediately with Cream Cheese Frosting.

Notes

EVERY OVEN IS DIFFERENT so your molten lava cake may need 1 or 2 min more/less in the oven: bake one as a test and adjust the timing according to your oven.
You can freeze the filled molds up to a month for a ready to go dessert! In this case, you have to bake the frozen dessert (not defrosted) in preheated oven at 400° F (200°C) for 14 minutes.
