The oldest traces of pasta known to date, are noodles of the là miàn type (drawn by hand), consisting of two millet flour, setaria italica and panicum miliaceum, found in the ruins of Lajia, in China and dated from -20003.

The term “paste” comes from the Low Latin “pasta”, in the same sense. The best-known pasta comes mainly from Italy and China. In both cases, this pasta has influenced neighboring countries that have been able to create particular varieties of noodles (France, Korea, Japan, Vietnam).
