Italian Mozzarella in Carrozza Sandwich

How to make the easiest and irresistible traditional Italian savory recipe; Mozzarella in Carrozza is the perfect sandwich! The gooey and stretchy mozzarella cheese filling is simply amazing and matches perfectly with the crispy bread slices.

It’s an ancient recipe from the Neapolitan tradition and it came from the need to re-use the old mozzarellas and stale bread.

As always, when you make Italian recipes, it’s very important to use high-quality ingredients; the traditional recipe is made with Italian durum wheat flour bread, but if you can’t find it, you can use soft white bread.

Ingredients

Makes about 3 servings:

  • 1 (250 g – 9 oz) Mozzarella Cheese
  • 10 Durum Wheat Flour Bread slices (if you can’t find it, you can use soft white bread)
  • 3 Eggs
  • Black Pepper
  • Salt
  • About 4 tablespoons (50 g) Extra Virgin Olive Oil

Instructions

  1. Add Extra Virgin Olive Oil in a pan and heat the oil over low-medium heat.
  2. Slice the Mozzarella cheese in medium-thick slices and press them between two layers of kitchen papers to absorb the cheese serum. Set aside.
  3. Slice the bread into medium-thick slices: if you use stale bread, you can remove the crust if too hard, soak the slices into milk for few seconds and squeeze them to make them softer. If you use soft bread or super soft white bread, skip the milk step.
  4. In a medium-size bowl, beat the eggs and season them whit black pepper.
  5. Quickly soak only one side of the bread slices in the egg mixture.
  6. Fry the slices over high heat onto the pan until browned: only fry the egg side of the bread slices and don't flip them. Dry the slices on a paper towel.
  7. Place a dried Mozzarella slice between the fried bread sides and well press the bread slices together.
  8. Dip briefly the sandwich in the beaten egg.
  9. Fry in hot oil on each side till crisp and brown; remove to kitchen papers for few seconds.
  10. Season with salt and serve immediately.
