Hi guys! Today, I introduce Milk Bread and Whole Wheat Bread recipe(No machine, with folding the dough).
You can make very soft and moist loaf bread very simply.
Step one. Mix every ingredient and rest it.
Step two. Let butter (or oil) absorb into the dough and then, prove and fold it.
If you don’t have a kneading machine, or don’t want to knead the dough for 20min with your hand.
Oven :190℃ / 374℉ for about 25min
Ingredients (loaf pan 22.510.59.5cm)
Some ingredient is not exactly the same with that you measure ‘g’. But, I hope it will be helpful to you guys♥
** 1cup(250ml) & 1Tbsp(15ml) **
1 Milk Bread
- bread flour 300g (2cup)
- ** Refer it :: You can use 400g of all purpose flour as well.
- But, the volume of bread will be smaller than original one.
- And taste will be little bit different. (less fluffy)
- Because, all purpose flour has less protein, that’s why it’s difficult to develop gluten.
- But, it’s still good.**
- sugar 30g (2Tbsp+1tsp)
- salt 4g (1tsp)
- instant dry yeast 3g (3/4tsp)
- milk 105g (105ml)
- water 110g (110ml)
*not cold room temperature unsalted butter or oil 10~20g
(butter 2~4tsp, oil 1Tbsp~1+1/2Tbsp)
*It’s up to you how much butter or oil you will use
If you use more butter, the bread will be more soft
2 Whole Wheat Bread
- Bread flour 220g (1+1/2cup)
- Whole wheat flour 80g (1/2cup)
- sugar 30g (2Tbsp+1tsp)
- salt 4g (1tsp)
- instant dry yeast 3g (3/4tsp)
milk 105g (105ml)
water 120g (120ml)
*whole wheat flour depends on the brand and environement, so don’t add all of liquid at once, check how much your dough needs liquid.
*not cold room temperature unsalted butter or oil 10~20g
(butter 2~4tsp, oil 1Tbsp~1+1/2Tbsp)
*It’s up to you how much butter or oil you will use
If you use more butter, the bread will be more soft
Egg wash
- 1 egg yolk + milk 1Tbsp
