Made some Spam musubi recently. Let’s get to it!
SPAM MUSUBI:
Your choice of Spam (I like Spam Light)
Japanese rice
Nori or seaweed wrapper/sheets
TERIYAKI SAUCE: ( I normally just eyeball it, but) Get your rice cooking first. For the sauce, just mix all the ingredients in a pan and place on a low flame. Stir occasionally. Wait until it starts to thicken, then set aside. It'll continue to thicken after this point, so try to get it to 75% of your desired thickness then take it out. It's easier to coat the spam slices if the sauce is not very thick. Slice the Spam to your desired thickness. For the rice mould, you can clean and use the Spam's tin container. Layer it with some cling wrap. Tear the nori to your desired wrapper size (typically in half, lengthwise). Place a Spam slice on top of the rice, followed by a piece of nori. Place a bit of oil in your pan and set your flame to medium-low. Pan fry your Spam slices until you get your desired browning. Lather both sides with your teriyaki sauce. 1min in the sauce should be more than enough.
2 regular scoops of rice should be enough for 1 musubi.
Place the rice inside the mould, fold the cling wrap's ends, and gently pack it to form your rice layer. Pull it out and unwrap.
Flip it, take off the cling wrap, and fold the ends of the nori over the rice layer.
The steam from the rice will moisten the wrapper, sealing it.
Just mix Japanese mayonnaise with a bit of wasabi.
Sprinkle with shiso fumi furikake.
You can smear this in between the Spam and rice if you want.
