Let’s cook some quick pancit palabok! I use Mama Sita’s Palabok mix in this recipe.

Ingredients

PALABOK SAUCE:

  • Mama Sita's Palabok mix
  • 1 tbsp Oil (whichever kind)
  • 3 cloves Garlic
  • 1 cup Tinapa flakes (smoked fish flakes)
  • 1 Pork bouillon cube

NOODLES AND TOPPINGS:

  • Sotanghon (vermicelli, rice noodles)
  • 1 Egg
  • Cooked shrimp
  • Chicharon (pork crackling)
  • Scallions
  • Calamansi (substitutes are lemon or lime)

Instructions

  1. To prevent clumping, dissolve the mix in a glass of warm water first.
  2. Normally you'd add the bouillon after adding the water, but as I did you can also crush it first, and then mix it with the fish flakes, before adding the liquids.
  3. This particular palabok mix is easy to find in Asian groceries.
  4. 10min in freshly boiled water should be enough to cook the noodles through. I used packed cooked shrimp for this recipe - but just to be extra safe, I heated it in the pan for a bit before consuming. The lemon juice helps with the fishiness.
  5. Optional, fried tofu, as well as baby squid heads, are also good add-ons.
