Ingredients

  • 155g Egg
  • 90g Sugar
  • 10g Honey
  • 2g Vanilla extract 
  • 30g Unsalted butter
  • 45g Milk
  • 100g Cake flour
  • Orange zest

  • 70g Plain yogurt 
  • 20g Honey
  • Orange zest

  • Whipped cream (300g whipping cream + 30g sugar)

  • 50g White chocolate
  • 5g Unsalted butter
  • 30g Warm grapefruit juice 
  • 2g Gelatin sheet

  • 50g White chocolate

  • 30g Warm orange juice
  • 2g Gelatin sheet
  • Food coloring (white, orange, red)

Instructions

  1. Place a bowl of eggs in a pot of hot water, add sugar, honey and vanilla extract, and stir until the temperature is 40 degrees.
  2. Whip with a hand mixer until you get a rich ivory-colored foam and sift the ingredients and mix.
  3. Put a little bit of dough in a bowl of melted salt-free butter and milk (temperature 50 ~ 60 degrees) and mix it.
  4. Pour the batter into a 15 cm round frame with butter and heritage paper, clear the air bubbles, and bake for 35 minutes in a 170 ° oven (180 ° 20 minutes preheat).
  5. Cut the top of the cooled sheet and cut it into 3 pieces to prepare.
  6. Mix honey and orange zest in plain yogurt.
  7. Put the sheet on the plate, apply (6), whipped whipped cream, remove the peel, put sliced ​​grapefruit and orange, and apply cream.
  8. Raise the sheet and repeat the above procedure one more time.
  9. Raise the last sheet, apply orange yogurt, apply whipped cream smoothly and place in the fridge.
  10. Melt the ball containing white chocolate and salt-free butter over hot water and mix with warm orange juice.
  11. Add gelatin, mix and add food coloring to make color. The grapefruit glaze is made in the same way.
  12. Sprinkle two glazes on the edge of the cake in half and decorate with whipped cream, sliced ​​grapefruit and orange on top.
