Better than Panda Express! Crispy Ginger Soy Fish – Chinese Stir Fry & Sweet & Sour Recipes

Ingredients:
Serves 3 – 4 pax

Ingredients (A)

Mix the ingredients below together.

  • 280g of snapper meat – sliced thinly
  • 1 tablespoon of fresh ginger juice
  • 1/2 teaspoon of salt
  • A few dashes of white pepper

Ingredients (B)

Dissolve the ingredients below together then add marinated fish from Ingredients (A) and coat the fish well. Then proceed to deep fry the fish until golden brown and crispy.

  • 1 cup (125g) of cornflour (can be replaced with potato flour)
  • 1/2 cup (125ml) of water

Ingredient (C)

Fry until golden brown over low heat and then set aside once done. Use as garnishing once the dish is ready.

  • Some cooking oil
  • 15g of young ginger – julienne

Ingredients (D)

This part of the ingredients is to make the sauce. Then mix the fish in the sauce and toss to coat the fish well.

  • Use the oil remaining from (C)
  • 3 cloves of chopped garlic
  • 1/2 cup (125ml) of water
  • 1 tablespoon of oyster sauce
  • 2 tablespoons of light soy sauce
  • 1 tablespoon of premium dark soy sauce
  • 1.5 teaspoons of sugar
  • Some cornstarch solution
