Chicken Drumsticks in Puff Pastry with Mashed Potatoes and Mushrooms

I tried this dish once in my friend’s house and I thought it would interesting to share this recipe.
Yes, it’s not your everyday dish, but for a special occasion, it would be perfect!

Chicken Drumsticks in Puff Pastry with Mashed Potatoes and Mushrooms

Chicken Drumsticks

Ingredients

  • 8-10 chicken drumsticks
  • puff pastry squares( i have a package of 10)
  • 2 lbs Yukon Gold potatoes
  • 6 cloves garlic
  • 1 bay leaf
  • 2 lbs mushrooms
  • 1 medium onion
  • 3 tbsp butter
  • 2 tbsp cooking oil( I use Avocado oil)
  • 1 egg for brushing over the pastry
  • Fresh dill or parsley
  • Salt and pepper to taste
  • ¼ cup half and a half or heavy cream

Instructions

  1. Prepare mashed potato filling.
  2. Boil potatoes along with garlic, bay leaf, and salt until fork tender.
  3. Drain water, but leave the garlic in there, remove bay leaf.
  4. Mash as you would mash potatoes and add half and half and some salt to taste and white pepper.
  5. In a large skillet add 2 tbsp butter and saute onions until golden brown, add mushrooms. Season.
  6. Brown mushrooms and onions and add chopped fresh dill or parsley.
  7. Combine with mashed potatoes and let cool.
  8. Season drumsticks with salt and pepper on both sides.
  9. In a large skillet add cooking oil and butter.
  10. Add chicken and brown on both sides.
  11. Close lid, reduce heat and let cook completely until chicken is done and meat detaches from the bone.
  12. Let cool.
  13. Roll out puff pastry to the desired size to wrap around the chicken(see video)
  14. Add filling in the center, then place drumstick and wrap around.
  15. Secure with thread.
  16. Place wrapped chicken onto a lined baking sheet.
  17. Egg wash it.
  18. Bake it at 360°F(185°C) for 535 minutes or until puff pastry is golden brown.
  19. Take out, let cool for 5 minutes
